Instant Pot Potato Soup
A good and hearty soup for a cold winter day. It is very simple and easy to make in the Instant Pot.

Ingredients
Sautee
- 1 White Onion (Diced)
- 4 Clove Garlic (Minced)
- 2 Tablespoon Canola Oil
Sealed Cook
- 4lb Potatoes (Peeled & Cubed)
- 6 Cups Ham Stock
- 8oz Block Neufchatel Cheese
After Cook
- 1 Stick Butter
- Salt
- Pepper
- MSG (optional, recommended)
Toppings (Optional)
- Fresh Shredded Cheese (gruyere, muenster, emmental)
- Bacon Chunks
- Scallions
Instructions
- Put the oil, onion, and garlic into the Instant Pot on the sauté setting
- Sautee until transparent and fragrant
- Add in cubed potatoes
- Add in Neufchatel cheese
- Cover with Ham Stock and seal pot.
- Set to soup setting for 15 minutes.
- Add in the butter, salt, pepper, msg
- Use a meat/potato masher to break the potatoes & butter down to pea size.
- Scoop into a bowl and add your preferred toppings.
