Instant Pot Potato Soup

A good and hearty soup for a cold winter day. It is very simple and easy to make in the Instant Pot.

Cook Time: 20 minutes
Total Time: 40 minutes

Ingredients

Sautee

  • 1 White Onion (Diced)
  • 4 Clove Garlic (Minced)
  • 2 Tablespoon Canola Oil

Sealed Cook

  • 4lb Potatoes (Peeled & Cubed)
  • 6 Cups Ham Stock
  • 8oz Block Neufchatel Cheese

After Cook

  • 1 Stick Butter
  • Salt
  • Pepper
  • MSG (optional, recommended)

Toppings (Optional)

  • Fresh Shredded Cheese (gruyere, muenster, emmental)
  • Bacon Chunks
  • Scallions

Instructions

  1. Put the oil, onion, and garlic into the Instant Pot on the sauté setting
  2. Sautee until transparent and fragrant
  3. Add in cubed potatoes
  4. Add in Neufchatel cheese
  5. Cover with Ham Stock and seal pot.
  6. Set to soup setting for 15 minutes.
  7. Add in the butter, salt, pepper, msg
  8. Use a meat/potato masher to break the potatoes & butter down to pea size.
  9. Scoop into a bowl and add your preferred toppings.
