Fluffy Blender Pancakes

Ditch the whisk and embrace the blend for this effortless griddle perfection.

Ingredients

Wet Ingredients

  • 2 Large Eggs
  • ¼ Cup Vegetable Oil
  • 1 ½ Cup Milk
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Vanilla Extract

Dry Ingredients

  • 250 grams All Purpose Flour
  • 3 Tablespoons Granulated Sugar
  • ½ Teaspoon Baking Soda

Instructions

  1. Put eggs, vegetable oil, milk, and vanilla extract in a CuisinArt Blender” target=”_blank” rel=”nofollow”>blender.
  2. Blend on a slow speed until combined.
  3. Put Flour, sugar, baking powder, salt, and baking soda in a sifter.
  4. With blender on a slow speed, remove top and sift dry ingredients in slowly.
  5. When all dry ingredients are combined, replace top on blender and increase speed for about 30 seconds.
  6. Turn off blender and allow batter to rest for 15 minutes
  7. Preheat a flattop or griddle to a medium heat while batter is resting.
  8. Pour batter into 16 4″ circles and allow to cook until the outer edges start to turn up and bubbles for on the top.
  9. Flip and cook, checking the other side for evening browning to know when they are done.

Notes

If you want to add fresh fruits to the pancakes, make sure they are in small chunks and have been warmed. Frozen fruits will cause the batter to not cook properly. Just sprinkle the fruit chunks on top of the pancakes as you pour then on the griddle.
