Asparagus Fritatta
Ingredients
- 2 Tbs Butter
- 1/2 red onion sliced
- 2 clove garlic minced
- 10 to 12 stalks of asparagus, cut into bite size chunks
- 6 eggs
- 2 heaping wooden spoon scoops of cottage cheese
- 8oz fresh shredded mozzarella
- 4oz fresh shredded Parmesan
- 1Tbsp chives
- 1tsp tarragon
- 1tsp salt
Instructions
- Mix together eggs, cottage cheese, tarragon, chives, and salt in a mixing bowl.
- Saute until asparagus starts to get soft
- Saute until starting to translucent
- Stir together and then put in skillet and stir to combine
- Let sit until egg mixture starts to set but is still jiggly on top
- Top with shredded mozzarella and parmesan
- Put under a low broiler until browned
- Top with a sprinkle of parsley
