Asparagus Fritatta

Asparagus Fritatta

Ingredients

  • 2 Tbs Butter
  • 1/2 red onion sliced
  • 2 clove garlic minced
  • 10 to 12 stalks of asparagus, cut into bite size chunks
  • 6 eggs
  • 2 heaping wooden spoon scoops of cottage cheese
  • 8oz fresh shredded mozzarella
  • 4oz fresh shredded Parmesan
  • 1Tbsp chives
  • 1tsp tarragon
  • 1tsp salt

Instructions

  1. Mix together eggs, cottage cheese, tarragon, chives, and salt in a mixing bowl.
  2. Saute until asparagus starts to get soft
  3. Saute until starting to translucent
  4. Stir together and then put in skillet and stir to combine
  5. Let sit until egg mixture starts to set but is still jiggly on top
  6. Top with shredded mozzarella and parmesan
  7. Put under a low broiler until browned
  8. Top with a sprinkle of parsley
